Description
After harvest, the beans undergo the same meticulous picking and processing as our regular caffeinated coffees. They are then shipped to Vancouver, where the decaffeination magic happens with the help of Swiss Water. This gentle, chemical-free process uses a proprietary Green Coffee Extract (GCE) to draw out caffeine while preserving the coffee’s signature flavours. The beans are first cleaned and hydrated using pure local water, then immersed in GCE. Over several hours, caffeine naturally migrates from the beans into the extract until equilibrium is reached. The GCE is continuously filtered through carbon, removing caffeine but keeping the flavour compounds intact. This cycle is carefully monitored for about 10 hours, ensuring the beans are 99.9% caffeine-free without sacrificing their rich taste.
The result is a decaf coffee that delivers all the complexity and character you’d expect—minus the caffeine.
